Heat a skillet with a light coating of oil over medium-high heat. While the pan is warming, prepare the bologna. If you’re using bologna from a deli, there’s no need to remove the red casing. However, for prepackaged brands like Bar-S or Oscar Mayer, make sure to remove and discard the red edge.

Spread mayonnaise or mustard (or any preferred sauce) on the bread slices, and prepare any vegetables you plan to add. Since bologna cooks quickly, it’s best to have all your ingredients ready before you start cooking.

Once you’ve discarded the red edge, place the bologna in the hot skillet. It should begin to sizzle. As it cooks, you’ll notice bubbles forming in the center. To prevent curling, cut two X-shaped slits in the middle.
