Ingredients:

3-4 medium-sized beets
1 cup apple cider vinegar
1 cup water
1/4 cup honey or maple syrup (adjust for sweetness) or 2 tablespoons for less sweetness
1 teaspoon salt
1 teaspoon mustard seeds (optional)
1/2 teaspoon peppercorns (optional)
2-3 cloves garlic, peeled and crushed (optional)
Fresh dill or other herbs (optional)

Instructions:

Clean and trim the beets, then boil them for 30 to 40 minutes until tender. Let them cool before slicing them into rounds or wedges.
In a small pot, combine the apple cider vinegar, water, honey (or maple syrup), and salt. Add mustard seeds, peppercorns, and garlic if desired. Heat the mixture until it boils, stirring to dissolve the honey completely. Remove from heat.
Place the beets in a jar and pour the hot brine over them, ensuring they are fully covered. Add herbs if using. Let the jar cool to room temperature, then seal with a lid and refrigerate.
